Paco specialises in different types of cooking. His passion is to discover and teach an authentic expression in flavour, vitality and food awareness. Paco values and respects local products, sustainable and seasonal, but first of all, the quality of the whole ingredient. He works in the health industry to teach people a balanced and unconventional food-for-health experience. 

Paco’s professional career has been centred around plants and food. His great curiosity and creativity have allowed him to combine these two areas throughout his work in various projects that he has been part of. He considers himself to be a person with a great sense of responsibility, creativity and with a good capacity for teamwork and personal relationships. He has collaborated in seminars and courses for natural nutrition and vegetarian cuisine, run two restaurants and been Head Chef on a number of Health Boot Camps in souther Spain.

This Andalucian Cookery Course has been designed to provide participants with real insight into the recipes, methods and ingredients that have formed the basis of rural cooking for generations.

The course will concentrate on healthy eating and the use of the freshest seasonal fruits and vegetables to create exciting Spanish recipes. The Mediterranean diet is recognised as one of the healthiest in the world, with emphasis on prolific use of fruit and vegetables, finest olive oil and lean sources of protein such as fish and chicken.

Our tutor, Paco, is an English-speaking Spaniard with many years’ experience of cooking, catering and training in Granada. He specialises in Vegetarian and Healthy-eating cuisine, inspired by the best local ingredients.

Essential to our course is the involvement of the local village cooks, all of whom are keen to share their expertise, and together we will explore how best to use fresh seasonal fruit and vegetables, and fish caught in the Atlantic and Mediterranean. This is a very hands-on course, perfecting the techniques that can be taken home and used again and again. Recipes that have been in families for years will be interpreted and developed in the kitchen to create exciting contemporary variations using fabulous ingredients sourced locally.

As part of the course, we will be inviting in local experts to discuss wines grown in the Granada region, and we will be shown how to carve and serve jamón, dried and cured in Granada. We will also include a tour of some of our own favourite tapas bars in Granada and will then recreate the recipes back in the kitchen.

Price per person 1450€ for the week (approximately £1325) to include 5 days’ tuition, full-board accommodation and ingredients. Flights and Alhambra tickets are not included.

Non-participating partners, friends and family are more than welcome, and the price is 950€ per person sharing a twin ensuite room.

Accommodation is on a full-board basis in a charming rural hotel located in the very historic village of Moclín, about 35 minutes’ drive from Granada city and airport. Guests will have private twin ensuite bedrooms, all of which are spacious and very traditionally Andalucian in style. All classes will be held in the large studios in the hotel, and there will be plenty of opportunity to get out and explore the glorious surrounding countryside. The property, which is exclusively ours for the week, is arranged around a central open courtyard, has a roof terrace and is right on the edge of the village with panoramic views over the surrounding landscape.

The nearest airport is Granada (GRX). Both EasyJet and British Airways fly direct from London and Manchester. The dates of the course have been scheduled to coincide with Saturday flights from London Gatwick Airport direct to Granada Airport.
