ABOUT THE TUTOR

Carlos Sanchez

Carlos Sánchez was born and raised in a small village in the very rural north-eastern corner of Granada province, Andalucia. As a child, he was brought up on naturally produced, seasonal products using recipes passed down through generations of his family.

As an adult, he decided to cast aside his first career as a physiotherapist and return to his love of food. He has travelled widely throughout Europe, spending time with chefs in the UK, Italy and Switzerland working with the likes of the Roux family for the Wimbledon Lawn Tennis Championships and as head chef at Edinburgh’s Le Roi Fou restaurant.

Now, Carlos is a private chef and we are delighted to have him join us as the tutor for this course. He speaks fluent English and Italian as well as his native Spanish.

COURSE DETAILS

This Andalucian Cookery Course has been designed to provide participants with real insight into the recipes, methods and ingredients that have formed the basis of rural cooking for generations.

The course will concentrate on healthy eating and the use of the freshest seasonal fruits and vegetables to create exciting Spanish recipes. The Mediterranean diet is recognised as one of the healthiest in the world, with emphasis on prolific use of fruit and vegetables, finest olive oil and lean sources of protein such as fish and chicken.

Essential to our course is the involvement of the local village cooks, all of whom are keen to share their expertise, and together we will explore how best to use fresh seasonal fruit and vegetables, and fish caught in the Atlantic and Mediterranean. This is a very hands-on course, perfecting the techniques that can be taken home and used again and again. Recipes that have been in families for years will be interpreted and developed in the kitchen to create exciting contemporary variations using fabulous ingredients sourced locally.

As part of the course, we will be inviting in local experts to discuss wines grown in the Granada region, and we will be shown how to carve and serve jamón, dried and cured in Granada. We will also include a tour of some of our own favourite tapas bars in Granada and will then recreate the recipes back in the kitchen.

COST

Price per person €1,850 for the 7 nights to include 5 days’ tuition, full-board accommodation and materials. Participants can, of course, bring their own materials if they wish.

Flights and Alhambra tickets are not included.

A maximum of 5 participating places available on this course.

Partners, friends and family who wish to take part in the course are welcome, on the basis that they will share a twin room. Price is €1,450 per additional person.

Non-participating partners, friends and family are more than welcome, and the price is €1,150 per additional person sharing a double or twin ensuite room.

ACCOMMODATION

Accommodation is on a full-board basis in a charming rural hotel located in the very historic village of Moclín, about 35 minutes’ drive from Granada city and airport. Guests will have private twin ensuite bedrooms (you will never be asked to share a room), all of which are spacious and very traditionally Andalucian in style. All classes will be held in the large studios in the hotel, and there will be plenty of opportunity to get out and explore the glorious surrounding countryside. The property, which is exclusively ours for the week, is arranged around a central open courtyard, has a roof terrace and is right on the edge of the village with panoramic views over the surrounding landscape.

FLIGHTS

The nearest airport is Federico García Lorca Granada-Jaén Airport (GRX). As of 2nd April 2022, Vueling (part of IAG) will open new direct routes from London Gatwick Airport to Granada.

British Airways, Jet2, EasyJet and Ryanair are just a few of the airlines that offer regular direct flights from the UK to Málaga.
